Baking and Cooking with Honey - Honey browns easily in the oven - reduce your oven temperature by approximately 25°F to help with this
- Honey has a high moisture content (i.e., it contains water). When substituting with honey, reduce the amount of liquid called for in the recipe by 20-25% (e.g., if the recipe asks for a cup of water, only put in 3/4 cup).
- Add a little extra baking soda when you use honey in the recipe to prevent over-browning.
- There is no standard weight for honey as moisture content will affect the measurement. Some people say honey weighs 1.5 times as much as water. Some ingredient converters will give the following:
1 cup honey = 12 oz = 8 fluid oz = 340 g = .75 lb - Typically, you can exchange half of the sugar called for for honey without altering the rest of the recipe.
